Amontillado sherry, 100% palomino grape grown in far flung Andalucia, starts out with biological aging under flor which is sort of a film yeast indigenous to the region, for the first three to eight years or so. Amontillado sherry is matured further (usually longer) without flor where it oxidizes in a slow and controlled way, exposed to oxygen through the slightly porous oak, and gains a darker color and richer flavor than Fino, exalting toasted and nutty aromas.
