The Story: A sailing trip with a hike around the land where Castellaro currently stands inspired Massimo & Stefania to begin Tenuta Castellaro! Their commitment to the land and to restore the wine tradition of the Aeolian island, Lipari, has been a labor of love - and a whole lot of really hard work. Partnering with Salvo Foti, they seek to be stewards of these lands, restoring the old traditions and allowing the wines to be true representatives of their place - Lipari! The wine of the Castellaro estate are incredibly unique for many reasons - the land, the pre-phylloxera bush vines planted at high density (9000 plants per hectare) and of course, the people who make the difficult choices and do the very hard work of recovering these volcanic lands that had been left un-tended for hundreds of years. The hand picked clusters are de-stemmed. Grapes are fermented by the native yeasts present on the grapes. After fermentation the wine is decanted into steel tanks where it refines and carries out the malolactic fermentation. Aged in steel for about 1 year, the wine is not subjected to any fining or filtering, but just static decanting before bottling.
Personality: A wine with a deep red color and violet hues. To the nose, notes of cherry and spices blend with the intriguing briny aspect of Corinto Nero - maybe something umami, creating an enveloping aromatic complexity. The taste is elegant and refined, featuring a typical freshness and a savory finish.
Harmony: A vespa ride around the island after a day of sailing, or just enjoy with any variety of pastas, pizzas, even a rare red wine pairing with salmon.
