The Story: Since 1860, The Rallo family has stewarded the care of their Trapani area vines in way Western Sicily where great-grandfather Francesco Rallo moved to the Sicilian countryside and began working his first plots of land in the Baiata district. Today young and zealous siblings, Flavia and Giacomo represent the new generation. Their philosophy is to express the pure essence of wine and its nature, practicing sustainable, organic and non-invasive cultivation and production techniques.
The grapes for this wine are organically treated, hand-harvested, native yeast fermented, and then lightly fined/filtered. Charmat Method in autoclave for 6 months to create the bubbles, not disgorged so might encounter a little sediment. Lastly, it's bottled right on the volcano, then 2 months of bottle refinement before release.
Personality: This sparkling Catarratto is light, fresh, and though not quite explosive, it’s clearly volcanic. The aromas are lively with hints of orange blossom, fresh-cut citrus, and jasmine. Its delicate bubbles deliver a palate with notes of honeycrisp apple that flows into an elegant grassy, herbal, lava-driven finish. The bubbles are delicate, and the flavor is astoundingly complex! Pine needles, oyster shells, green apples, and orange blossoms with lemon/lime acidity.
Harmony: A versatile wine that can be paired with anything from sushi to eggplant risotto.
