Much like the mythical Chimera - the Jackalope, this Cabernet is a unique creature. Winemaker Corey Schuster says, “People tell me that my Cabernet Sauvignon drinks like a Cab made by a Pinot Noir winemaker. A comment I’ve decided to take as a compliment.” He’s a little gentler on the fruit than some, and uses no new oak barrels so this wine may not be exactly what people expect from a Cab. A little lighter on its feet, perhaps. Fruit is more front and center than power and oak. This fruit comes from a lovely vineyard, which makes delicious wine. Corey wanted to show off the nuances of the fruit, rather than make a monster Cab. We’ll take it!

Grape: 100% Cabernet Sauvignon

ABV: 14%

Story: Unsatisfied with life as a civil engineer, Corey Schuster decided to make a drastic change and quit his job, sell all valuables, and travel. The gift to himself to start this journey was a jackalope tattoo on his right shoulder to join on this adventures. Followed by another turning point in his life: winemaker. The jackalope has become a special form of support and he want him featured prominently in this adventure. Thus, Jackalope Wine Cellars. “For me, the chance to create something, to have an end product I could hold in my hand and share led me to wanting to make my own wine. Further, wine is a social beverage. A wine bottle contains memories, experiences, and love. I want to create this,” he says.

Personality: With the bold flavors of blackberry pie – cooked fruit and a little yeastiness – alongside the minerality of crushed gravel and a few bright, tart hints of ripe cherry. And if you close your eyes for a moment, you’ll pick up the spice and vegetal notes of a green pepper as it fades away.

Harmony: Roast chicken, lentil stew, anything with mushrooms, or simply - Pizza night.
