Grape: 100% Primitivo

ABV: 12.5%

Soils: Calcareous

The Story: Native yeast ferment gets a jump start from pied de cuve., which lasts 15 days in stainless steel tanks. After 7 days, the fruit is pressed. Spontaneous malolactic fermentation with minimal use of sulfur in the cellar.

Personality: Fun fact, Primitivo and Zinfandel are genetic twins, clones of an ancient Croatian varietal. But the Italian rendition couldn't be more different from what we see coming out of California. Think of Primitivo as the light-hearted, easy-going sister to Zinfandel's broody potency (definitely was a goth in high school).

Harmony: A day drinker, best with a slight chill. Pair with anything off the grill, especially BBQ! Meatballs in spicy tomato sauce, or roasted beet gnocchi with pistachios.
