Grape: 70% Cabernet Franc, 30% Côt
ABV: 12%
The Story: Jean-Jacques and Vincent Pineau are passionate winemakers. They have been operating the Domaine Bonnet-Huteau – a family propriety for more than 150 years – in the center of the Sèvre & Maine appellation. Usually, they give their best to develop a whole palette of flavours of Muscadet wines reflecting the best quality and minerality for each land – gneiss, micaschist, amphibolite and granite, but this is a rare red wine from the region. Their vine-growing respects both soil and Nature. Today, the entire domain (40 hectares) is run in biodynamics (certified by Biodyvin). This wine was vinified and aged in stainless steel, cold pre-fermentation maceration for 5 to 8 days. Thermo-regulated vinification and malolactic fermentation.
Personality: Supple and tannic, with notes of spices and small red fruits, and effusive aromatics on the nose.
Harmony: Whatever you pair this with, make sure its accompanied by a garden’s worth of fresh herbs. Beef fajitas would be an amazing pairing!
