Blend: 65% Pinot Noir, 35% Gamay, & 5% Côt (Malbec)
ABV: 12.5%
The Story: Francois Cazin is one of the famous producers of the Cheverny appellation in France’s Loire Valley. For the Les Petit Chambord, all estate vines averaging thirty years old on clay-limestone soils, and harvested by hand. The Pinot Noir is destemmed and macerated for a week, while the Gamay is whole-cluster fermented semi-carbonically; the small bit of darker, more tannic Côt, aka Malbec, adds a touch of color and structure. All stainless steel to maintain freshness, no oak.
Personality: Right away you notice the color – it is beautifully saturated in the glass. The aromas are mellow but complex with an underlying intensity that pulls through the long finish, which include soft tannins that do not quit. This wine gets better after being open for a bit and is a favorite.
Harmony: Enjoy it with roasted chicken thighs in a light yogurt sauce, or sauteed veggies, or charcuterie snacks. Our pick for Thanksgiving pairing perfection.
