Grape: 100% Pinot Noir

The Story: The David Hill Vineyard is a 40-acre south facing hillside nestled in the northern Willamette Valley famed for it’s Laurelwood soil. The property now farms seven clones of Pinot Noir, but the blocks are kept separate until blending. Over the last 10 years, the vineyard has transitioned from conventional farming to organic. In 2019 Chad Stock joined the David Hill team to pursue producing the finest possible wines from some of the oldest vines in the Willamette Valley. He previously spearheaded Minimus, Omero, and Craft Wine Co in Carleton. This Pinot is from dry farmed old vines, spontaneously fermented, whole cluster of course, aged in neutral French oak for 15 months before bottling unfiltered.

Personality: Spiced cedar, black tea, and rose petal with a note of wild strawberry greet the nose of this gorgeous Pinot Noir. Brambly red fruit and black pepper join a savory umami quality.

Harmony: Open this wine after a day of foraging mushrooms, and maybe roast some salmon on cedar planks, or rotisserie chicken with stewed spicy tomato sauce.
