Soil: 80% clay and limestone, 20% sandy with a high presence of calcium carbonate
Story: The La Staffa winery, in the Verdicchio dei Castelli di Jesi area, is an organic farm that produces artisanal wines with a strong territorial identity. On the rolling hills of Staffolo (near Ancona), in the north of the Marche, Riccardo Baldi takes care of twelve hectares of vineyards cultivated mainly with Verdicchio with passion and absolute dedication. Native yeast as always, whole cluster pressing, pied de cuvee fermentation, then fermentation and elevage; 4 months sûr lees with weekly bâtonnages.
Personality: This wine is salty as hell! Bright green apple, tangerine, and lemon zest are highlighted by a saline-rich minerality from the old salt springs found underground.
Harmony: A match made in heaven with richer seafood dishes like pasta with clams, or a roadie during a long hike through the cliffside vineyards overlooking the sea.
