Grape: Nero d’Avola

ABV: 13.5%

Story: The Nero d'Avola used for Respiro comes from a single vineyard facing south, belonging to Valdibella partner Pietro Scardino. Vinified and aged in stainless steel vessels, and in the absence of added sulphites which, together with native yeast fermentation, make the most of the varietal characteristics and special terroir. That's why it was called Respiro, Italian for: nothing more vital than the breath.

Personality: Ruby red, very intense fragrance of cherry and berries. In the finish, perhaps a light balsamic note. It’s a warm and quite soft wine, acidity and tannins galore offer sublime enjoyment. Complex but unserious.

Harmony: Literally begging for weekday pasta night, lots of red sauce and pecorino cheese.
