The Story: From 15 year old vines, two grape varieties, Corvina and Rondinella, are vinified separately. They are given a cool-temperature, 6-8 hour maceration on the skins, which extracts just enough color to give a lively, medium-bodied hue to the juice. The must then ferments at a cool temperature. The finished wine matures on the fine lees in stainless steel tanks until the following spring, when it is bottled.
Personality: Perfectly pink! The nose expresses a lovely aroma of orange blossoms, rose petal, and ripe, red cherries. On the palate a clean, minerality accompanies black cherry, strawberry, orange peel and juicy plum.
Harmony: So many directions to go with this one - classic Venetian fare like risotto with fresh spring peas, charred radicchio, sardines, or freshly made raviolis with cream sauce. drizzled with olive oil, garlic, parsley, and capers, or switch gears and think mid-afternoon tea snacks with fruit or pastries.
