Story: The Orgo story is a beautiful tale of revival, led by winemaking legend Gogi Dakishvili and his son, Temur. Together, they honor an 8,000-year-old Georgian tradition by fermenting wines in qvevri, giant ceramic vessels buried underground. A rare and difficult project, Orgo sources grapes from 50-80 year old vines, a rarity because most were ripped up during the Soviet era. The winemakers of Georgia heroically maintained their traditions in secret. This father-son duo's mission is to make singularly unique wines that add new elegance and refinement to their ancient heritage.
The name saperavi means “paint or dye”, and the wines it produces are quite inky in color as a result. Saperavi is part of a rare category of grapes known as teinturier grapes, with pigmented pulp as well as skin, which distinguishes them from many other grapes which have dark skins but light pulp. This extra pigment comes from anthocyanins, making saperavi higher in antioxidants as well. #winefacts
Personality: Deep and dark in the glass - yet light and lively on the palate - this yields exuberant layers of bright sour cherry, brambly wild berries, pomegranate, and earth, with hints of cracked pepper, fennel pollen, dried rose petal and green herbs on the finish. A beautifully complex character that’s elegantly earthy with bright, vibrant energy.
