The Story: About a two hour drive due north from Madrid, Germán Blanco set up his micro-winery operation in the small town of La Aguilera. He makes "vinos de pueblo", blended wines from different vineyards and villages in the area, like this one from sustainably farmed vines which average 50 years of age. He uses only traditional farming methods and is bringing back ancient techniques like foot stomping* of grapes. All of the fruit for this wine is destemmed; crushed by foot as mentioned, fermented in open top oak foudres and clay amphoras, and aged in neutral oak barrels. Bottled unfined and unfiltered and without cold stabilization.
Personality: This beauty has an incredible capacity to be both vibrant and fresh, yet exhibiting dark flavors of black cherry, plum, cedar, and clove.
