The Story: After helping establish a new vineyard in the outskirts of Paris and working alongside some of the top viticultural and wine making consultants of the 1st and 2nd growth Chateaus in France, Jarad Hadi decided to return home to develop vineyards in the Northern Willamette. Focused in the Vineyard, GRAPE INK was established to clearly connect culture and wine making conjoining the hard work of farming each cluster to produce honest wines rich in personality. Jarad grows wine, taking care of each of parcel in the neighborhood personally as he sees this the difference between a common industrial process and our hands on approach, taking pride in all aspects of the year as an artisan.
Personality: The wine is transparent and energetic while also being grounded in texture and baking qualities from extended lees aging. The perfume is reminiscent of white flowers and fresh herbs while the palette is saline and earthy.
Harmony: Dijon mustard and hot honey chicken, but Aligoté also does wonderfully alongside fish dishes, gooey cow’s milk cheeses, and soups or salads.
