This Asolo Prosecco DOCG ‘Col Fondo’ was born from the desire to rediscover papà Emilio’s old technique in the production of Prosecco. From the selection of the grapes from the family’s oldest vineyard and skin contact for 18 hours before pressing, comes a base wine with strong personality and minerality. Then follows a second fermentation in the bottle in accordance with the traditional method but without disgorgement (aka sediment). The presence of yeast in the bottom of the bottle is indicative of good wine health and authenticity. Adding character and texture you don’t want to miss - balanced, elegant, and with crisp minerality. Certified organic.

The Story: It is with hands dyed red from the Montello soil that the Pozzobon family created Case Paolin. In the early 1970s, Emilio the founder, son of farmers, bought the estate where his father and his grandfather had worked as sharecroppers. Abandoning silkworms, he devoted himself entirely to the vineyard and passed on this passion to his three boys: Diego, Adelino and Mirco. Twenty years later, the children grew up , ready to take over the reins of the winery, to transform and lead it into the new century. In 2013, the first grandson was born, little Emilio.

Personality: When it comes to wine tasting, Col Fondo is a pure expression of its terroir: a nose of flowers, yellow fruit and bread crust with a deep mineral sense in the palate. We recommend gently turning the bottle upside-down 2-3 times before uncorking.
