The Story: L’Archetipo started out with organic farming in 2010, then moving to biodynamic agriculture in which the synergies between all the ecosystems are linked to ensure healthy soil and earth. It is now operated by Valentino Dibenedetto and his four figli - Domenico, Maria, Andrea, and Carlo.
Personality: Medium body, balanced, soft and very fresh and tasty with notes of crushed hazelnut, sea salt, green pineapple, and yellow apple.
Harmony: Freshly caught branzino grilled to perfection, a mix of local veggies, picked egg crispy garlic dip and nigella seeds. Sounds specific, we know, but our rep raved about this pairing.
