The Story: FUSO is a project to search for and bottle Italy’s natural and characterful daily drinkers, by importer Portofino. They exclusively work with farmers and producer friends who are committed to organic viticulture, low-intervention, and terroir-driven wines. The wine is fermented with a slight maceration on the skins for 12 hours, and then continues to ferment in the tank. Once the wine settles, the producer transfers the juice to the bottle, where it f inishes fermentation and creates the magic fizz. This is the traditional col fondo style, and you’ll notice a bit of ‘fondo’, or sediment, in the bottle.
Personality: Along with high acidity, you’ll detect notes of pomegranate and cranberry in that magic fizz.
Harmony: A sunny picnic with all the charcuterie snacks and good company.
