Germán Gilabert 'El Edén' Brut Nature
Santa Fe del Penedés > Catalunya > Spain
Chardonnay, NV
A lot of people know Cava from the brand Freixenet, but this is a substantially more delicious wine—no sugar added here ('Brut Nature), and made with grapes from a more specific part of Catalonia, the Alt Penedès, as opposed to those big houses that buy fruit from all over the region to make bulk wine. With a label inspired by Hieronymus Bosch’s Garden of Earthly Delights, this traditional method sparkling from Cava country is all Chardonnay from 30 year old vines. But don’t despair, it’s also coastal, fresh, and delectable. A nice alternative to Champagne! Practicing organic.

The Story: German Gilabert El Edén is a cuvée made especially for Vinos de Terruños by Familia Pastor Gilabert in collaboration with a vintner, which has deep roots and intimate knowledge of cava production. Fermented in stainless steel tanks; cuvée rests on the lees for 45 days. Second fermentation in the bottle by the Champenoise method. Raised on the lees for 12 months before disgorging. Bottled no dosage, as a Brut Nature.
Personality: Fresh, fine bubbles, citrus, mineral, medium bodied, elegant, concentrated, dry, and long. Complex enough to keep you coming back for more but simple enough to drink with abandon.
Harmony: Ham croquettes? tinned fish? Skip the OJ and serve this at brunch, as is!
