The Story: With partner Jehan Hakimian, Ryan Stirm makes wines under the ‘Los Chuchaquis’ label - an experimental line of interesting fruit sources and combinations, plus unique winemaking, that allow the duo to play with wines that fall even farther outside the California mainstream. The ‘Sangre de Tiburcio' fruit is crushed and macerated for 6 hours before pressing, fermented in tank. Then, a small amount of chilled reserve Negrette juice is added before bottle fermentation in a Col Fondo-style pet-nat. The Siletto vineyard is farmed without synthetics / hand harvested / spontaneous fermentation / unfined and unfilitered / no added SO2.
Personality: Bubbly and brambly, tart with notes of crushed blackberries, flavors of pomegranate, sour cherry, rhubarb, and perhaps savory undertones (like olive brine or pepper) and even some earth. An absolute delight of a lambrusco--style sparkling red. Plus, with that label, it’s got spunk!
Harmony: Pair it with Pomegranate Molasses-Braised Chicken Thigh with Chanterelles, Zucchini, Emmer, Walnuts & Caramelized Cabbage
