Amontillado sherry is matured further (usually longer) without flor where it oxidizes in a slow and controlled way, exposed to oxygen through the slightly porous oak, and gains a darker color and richer flavor than Fino, exalting toasted and nutty aromas. An excellent aperitif, mixer for cocktails, or savor this unique and historical blend on its own.

The Story: Jerez, the hottest wine region in Spain and the home of Sherry production is located within the coastal province of Cádiz, in far flung Andalucía. Cádiz is one of the oldest continuously inhabited cities in Western Europe. With archaeological remains dating to 3,100 years ago and historical pedigree to boot - founded by the Phoenicans, and later a Roman colony with trade access to the Atlantic. During the Moorish period the town was called Sherish (a transliteration of the Arabic) which later became Jerez. Though the drinking of alcohol is prohibited in the Qur'an, wine production continued through five centuries of Islamic rule, because it was quite the valuable trade commodity. 
Gutiérrez Colosía, a bodega based in the town of El Puerto de Santa María, traces its roots back to 1838. For much of the twentieth century, it operated as an almacenista, aging and selling their wine to larger houses. It wasn't until 1997 that Juan Carlos Gutiérrez began bottling wines under his own label, Gutiérrez Colosía. The bodega benefits from being located on the banks of the Guadalete River, very close to where it empties into the Bay of Cádiz, where the resulting humidity produces a healthy, intense flor and distinct saline character in the wines.

Personality: Both classic and peculiar, this wine might drive a hard bargain. But be open minded! An intense, almost umami wine of nutty and caramel richness, doesn’t hurt that it's a tad boozy at 18%. 

Harmony: Sherry is the result of over 300 aromatic molecules each providing a possible link to an ingredient in any meal, from aperitif to dessert. This makes it extremely versatile on the table and cannot be recommended highly enough with a wide range of dishes. Some common recs include consommé, chorizo, turkey(!), duck, rabbit, escargot, nuts, and even grilled tuna.
