Grape: 35% Macabeo, 20% Xarel.lo, 20% Parellada, & 25% Monastrell

The Story: A classic blend of indigenous Catalonian varietals is made using the traditional method, same as Champagne. From 30+ year old vines, on slate, quartz, and anthracite the grapes were whole cluster pressed and fermented with native yeasts in stainless steel tanks. Only free-run juice (the best quality) was used to make this cuvée. Aged in bottle on the lees for at least 24 months. Zero dosage.
Personality: Snappy and bright with just the slightest hint of red berry spice. Elegance and finesse in spades.
Harmony: Skip the OJ and serve this at brunch, as is!
