The Story: In her life before wine, Akiko Shiba graduated from the prestigious Keio University and worked in Tokyo as an editor and journalist in the food and drink sector. In 2009 she received her engineering degree in Enology and Viticulture from the Germany’s University of Geisenheim in 2009, where she met her husband and co-conspiritor Christian Wichern. Akiko's practical experience is split between the vineyard and cellar as well as between Germany and Oregon. Amongst the wineries where Akiko has gained her practical experience are in Oregon: Evesham Wood, St. Innocent, Ayres and Domaine Serene. In Germany: Franz Keller, Schamari-Muehle, Heyl zu Herrnsheim, Chat Sauvage and Rudolph Fuerst. Which is to say, quite a list! All their wines are hand-crafted, small lot, and made with absolute minimal chemical intervention in the cellar - native yeast, low SO2, no fining, filtering or additions.
Personality: A bright, refreshing, yet complex white with prominent notes of citrus, grapefruit, and green pear.
Harmony: This wine would be great with salmon or herb roasted chicken.
