Grape: 50% Macabeo, 30% Xarel.lo, & 20% Parellada

The Story: A classic blend of indigenous Catalonian varietals is made using the traditional method, same as Champagne. From 30+ year old vines, on slate, quartz, and anthracite the grapes were whole cluster pressed and fermented with native yeasts in stainless steel tanks. Only free-run juice (the best quality) was used to make this cuvée. Aged in bottle on the lees for at least 24 months. Zero dosage.
Personality: Fresh, bright and clean with white flowers and citrus lifting the slight brioche-y quality. The fruit component really pops in this cuvée. Complex enough to keep you coming back for more but simple enough to drink with abandon.
Harmony: Skip the OJ and serve this at brunch, as is!
